These oatmeal cookies are tender, chewy, and full of banana flavor! The familiar comfy spices and plump blueberries make these much more irresistible. They will keep for at least one week if kept in an airtight container in the refrigerator--should they last long!
1 cup (100g) instant oats (fermented if needed and quantified like this)
3/4 cup (90g) whole wheat or gluten-free* flour (quantified like that )
1 1/2 tsp baking powder
1/4 teaspoon salt
2 tablespoons (28g) unsalted butter or olive oil, melted and cooled slightly
1 teaspoon vanilla extract
1/2 cup (120mL) pure maple syrup
In a medium bowlwhisk together the oats, flour, baking powder, cinnamon, and salt. Add the flour mixture, stirring just until incorporated.
Preheat the oven to 325°F, and line a baking sheet with a silicone baking mat or parchment paper.
With a spoon and spatula, dip the cookie dough to 15 curved scoops onto the prepared sheet, and flatten to the desired thickness and width using Oh She Glows 15 Best Vegan Cookie Recipes! a spatula. Bake in 325°F for 10-12 minutes.
Notes: It is extremely important to measure both the oats and flour properly utilizing this method or even a kitchen scale. (? That's exactly the one I own and love!) Too much of either would dry out the biscuits and leave them cakey instead of chewy.

Seal plastic wrap over the surface, and microwave the bowl on high for 1 second. Should you allow the peppers sit mixing together the cookie dough, then this small trick hydrates them so they're really tender and succulent!
